I'm a big fan of Rachael Ray recipes and this one was simple and did not disappoint. I didn't make it exactly like the recipe stated because I could not find any broccoli slaw at my grocery store. Instead I just used a bag of coleslaw mix.
What I would suggest: depending on how spicy your cajun seasoning is, use a generous amount. I was afraid my mouth would be on fire so I only lightly coated the front and back of the chicken tenders, not spicy enough for the end result. I also did not have canola oil so I used Olive Oil and it worked great. When the chicken was almost done I used two lemon wedges and squeezed the juice on the chicken while it was cooking. This gave the chicken an amazing flavor. Both my husband (who suggested more cajun next time) and two boys loved eating it. My eldest son and I also had two big helpings of the coleslaw. It had an amazing flavor too (I made this about 45 minutes before I made the chicken and put it in the fridge to get colder and let the mayo and lemon juice really come together.) I also added a little pepper and dill seasoning to the cole slaw.
Overall I really enjoyed this meal as did my family and will be making it again.
