So I went grocery shopping this morning and I am a little disappointed with myself. Here's why...I planned my meals for this weekend and the upcoming week but I still spent $40.00 over what I budgeted. My mistake was not having pricing for all of the items I was buying and under estimating their costs.
The first month is always the hardest, it's a learning month. A tip below from financial guru Dave Ramsay.
Keeping this in mind I'm less disappointed. After all it was $40.00 over and not $100.00. So how am I going to remedy this overage. I am going to try and stretch what I already have on hand in my pantry and freezer with the new food I bought and make it stretch for two weeks. Yeah, you read that right. I may have to go next week and get a gallon of milk, but taking stock of what we have at the house, I may be able to do this.
Some of the meals for this week include:
1. Blackened Chicken with Broccoli Slaw http://www.rachaelraymag.com/recipe/blackened-chicken-with-broccoli-slaw/
2. Asian Chicken Lettuce Wraps http://www.rachaelraymag.com/recipe/asian-chicken-lettuce-cups/
3. Turkey Meatball and Vegetable Soup http://www.rachaelraymag.com/recipe/chicken-meatball--vegetable-soup/
4. Chicken and Broccoli Stromboli http://www.rachaelraymag.com/recipe/chicken--broccoli-stromboli/
5. Oven Baked Chicken Fajitas
I'm a big fan of the magazine Everyday Rachael Ray! In the magazine is always a section called Express Lane Suppers. They are basically 3 meals in one grocery bag. Great recipes and the shopping list to go with it. The 3 I am going to make this week (#2-#4) are from the Express Lane Suppers. You can check it out more here Express Lane Suppers
