Oven Chicken Fajitas - Easy, Low Cost & Delicious





Our family loves anything Mexican when it comes to dinner time.  Not to mention Rotel might be the best thing in a can...EVER!  When I first stumbled upon this recipe I was a skeptic...fajitas in the oven, that is just weird.  
One day I was pressed for time to make a good meal for my family and I didn't want to wait for my husband to get home to grill (I am grill challenged.)  So I decided to give this a try and we have not had grilled fajitas since.  

This recipe has also become my go to recipe for my Moms group events (new baby, surgery, etc.)  The families are always appreciative of a home cooked dinner and always ask for the recipe after they eat it.

Not only is this delicious, but it is one of the easiest meals to prepare and you can change it to your liking (mild, spicy, or super spicy.)  Please check out the photos below for step by step instructions.

The Ingredients:
- 2-3 Boneless Skinless Chicken Breast (I use two chicken breast for my family of 4)

- 1 Can of Rotel (I prefer Mild but you could use Original for a little more kick)

- 1 Onion (sliced into strips)

- 1 Green Pepper (sliced into strips)

- Taco Seasoning Packet (or if you make lots of Mexican dishes just go for the big seasoning container, got mine at Kroger and Ortega is our favorite brand for this dish)

- Vegetable Oil (I don't measure this, just eyeball it, maybe 2 Tbsp)

- Fajita Shells, any sides, and toppings you want.  Pairs well with Mexican Rice, Refried Beans, etc.


First mix together in a bowl the taco seasoning and the vegetable oil.

Then use Kitchen Shears to cut the boneless skinless chicken breast in thin strips.  I do this right inside my baking dish (use a glass baking dish for best results.)

Once you have cut the chicken in strips, pour the mix of taco seasoning and vegetable oil over the chicken and stir until all pieces of chicken are coated with the mixture.

Next on a cutting board cut up the green pepper and onion into strips.

Once the green pepper and onion have been sliced, layer it over the chicken in the baking dish.

Next open the can of Rotel with a can opener.  Use a slotted spoon to scoop the tomatoes out (or you can drain them) and cover the green pepper, onion and chicken with it.

Voila!!  You have just made Oven Chicken Fajitas and they are ready for baking.
Bake at 375 Degrees in your oven.  Bake 15 minutes and then stir, once you are done stirring the mixture up, bake for another 15 minutes (or until chicken is cooked through.)

A tasty meal that is sure to please the entire family.

You can also make this meal during the day, cover it with plastic wrap and keep in the fridge until you are ready to bake it, or if you are taking it to a family event.

This is also a good meal to freeze, just freeze it in a Plastic Bag and completely thaw, then put it from the bag to the baking dish and cook as directed in the information above.

Also if you prefer to make your own taco seasoning you can mix together these spices:
2 tsp of Chili Powder
2 tsp of Cumin
1/2 tsp of Garlic Powder
1/2 tsp of Dried Oregano
1/4 tsp of Salt
