I get recipes from many different sources. One of my favorite places to browse is Pinterest. It has many different variations of what you are looking for and the pictures look very appetizing.
This recipe for Spinach Lasagna Roll Ups is very easy to make and they are filling. I got the original recipe from Pinterest but have modified it, so my recipe is below. This recipe will make 12 Lasagna Roll Ups (our family ate 6 and I froze 6 in an 8x8 pan for a future meal.) I love when I make a recipe and I can get two family dinners out of it.
Good sides for this meal include salad and garlic bread.
Ingredients:
1 box Lasagna Noodles (NOT oven ready)
1 lb.. Ground Turkey
12-15 ounce bag frozen spinach
15 ounce Part Skim Ricotta Cheese
1/2 cup Grated Parmesan
1 Egg Beaten
1/2 tsp Italian Seasoning
1/8 tsp Salt
1/8 tsp Pepper
2 jars Pasta Sauce
1/3 Cup Reduced Fat Shredded Mozzerella
Preheat oven to 375 Degrees
1. Cook the Noodles according to the package but al dente
2. Cook the ground turkey in a separate pan
3. Thaw the spinach by putting it in a colander and running under hot water. Pat dry in the colander with paper towel to absorb some of the water.
4. Once the noodles and meat have been cooked, beat an egg in a mixing bowl.
5. Add to the egg: spinach, meat, ricotta cheese, parmesan cheese, 1/2 of the Mozzarella Cheese, Italian seasoning, pepper, and salt.
Mix this all together to form the filling for the roll ups.
6. Drain the Noodles in a collander and run cold water on them. Then put the noodles one at a time on a dish towel to dry off.
7. Pour half of a jar of pasta sauce on the bottom of a 9x13 baking pan.
8. Once you have dried the noodles, put some of the filling on each noodle and roll them up.
9. Place rolled noodles into the baking pan (you should be able to get 3 noodles for each row for a final total of 12)
10. Pour rest of sauce over the top to coat all the noodles and sprinkle with mozzarella cheese.
11. Bake in preheated oven for 45 minutes.
